# POS for bakeries

> Point of sale for bakeries in Mexico: concentrated morning sales, products by weight, shrinkage control for perishables and fast restock by batch.

A bakery operates differently than a café or a restaurant. 70% of sales concentrate in the morning, products are perishable (what does not sell today goes to shrinkage), many items sell by weight or by piece with volume discounts, and restock by batch is constant.

## How a typical bakery uses El Nido
